Here are some of my favorite recipes.  

Almond butter coconut dark chocolate chip cookies (gluten-free)



1 cup almond butter

1/4 cup honey

1 egg

1/2 tsp baking soda

1/2 tsp baking powder

1 tbsp vanilla extract

1/2 tsp cinnamon

2/3 cup unsweetened shredded coconut

1/3 cup dark chocolate chips


Mix together all ingredients except coconut and chocolate chips.

I usually put everything in the bowl and mix once at the end.  Once full mixed, fold in shredded coconut and chocolate chips.

For small balls and place on a baking sheet lined with parchment paper.  Flatten balls slightly.

Oven should be preheated to 350 degrees.

Bake cookies for 10-12 minutes.

Take out of oven and let them firm up before moving the cookies onto a cooling rack.
