It didn’t taste as good as I remember

Whole 30 – day 31

What was the first thing I ate that was whole 30 non-compliant? Dark chocolate. And although it was good it wasn’t as great as I remembered it. I managed to have just one piece. Didn’t want more than that.

I had some chicken thighs to cook and it was so tempting to just cook up some shake n bake but I just wasn’t impressed with the coating ingredient list. So I turned to Pinterest. And I came across this recipe.

First time in a month that I’ve cooked with soy sauce and honey.
I haven’t tried it yet but it looks absolutely delicious.


Can’t wait to try it.

For the most part I’ve been eating the same as the past 30 days. Can’t really see myself going back to my old eating habits.

Kink in my neck…

Woke up this morning and I can barely move my neck. Looking left to right doesn’t hurt, but up and down hurts. I can’t even look down right now because the muscles are so tight and it hurts so much. Massaging the area doesn’t seem to help at all. I just really hope I wake up tomorrow morning and it will be ok, else my 630am WOD could be very uncomfortable.
I didn’t have much time to do meal prep so I’m quite nervous about my first day tomorrow on whole30. I did manage to make these for lunch:
Stuffed red peppers


These were so easy to make I’m surprised I haven’t made them before.
I have a bunch of hard boiled eggs and roasted chicken breast slices that I’ll pair up with spinach. I’ll definitely need to so more prep tomorrow.

So good… so not worth it

Meal prep only works if I eat the food I bring to work. This didn’t happen yesterday though.  I brought an awesome lunch but realized as soon as I got to work that I’d be in an all day session with IBM. AND they also announced they would be bringing in lunch for us.  The I.T department I work in is a huge IBM shop and we spend a ridiculous amount of $$$ in products and support. So when they offer to provide lunch it’s very welcomed.
And lunch was good,  not healthy but delicious.  Pizza was ordered from Santa Lucia which had won awards for their pizza.
And trust me the pizza was good.  I devoured three squares of the bbq chicken pizza (bbq sauce, chicken breast,  bacon and red onions.. topped with a ridiculous amount of cheese)
But my body paid for it.  For the rest of the afternoon I felt extremely bloated and overall gross 😦
It wasn’t a good idea.  I even washed the pizza down with a can of ginger ale.  Not good at all.
Lesson learned.
So not with it.

I did have an awesome without last night so at least burned off some of the pizza.  I was dripping in sweat by the time I was done.  It felt great!


Meal plan Monday and perfect form

Today is my first attempt at meal prep Monday. Here’s this week’s meal plan:

Monday – whole wheat spaghetti with homemade meat sauce and mushrooms

Tuesday – roasted chicken thighs with red and yellow peppers

Wednesday – egg white frittata with asparagus and bacon

Thursday – baked tilapia with sauteed spinach

Friday – chicken Thai curry

All dishes will be eaten with quinoa. Snacks for the week: strawberries,  blueberries,  pistachios and apples

Breakfast will be a protein shake with added fish oil and two slices of rye bread most likely with almond butter or a bit of margarine.

So I’m hoping I can stay organized and stay on top on cooking the meals. All ingredients are in the fridge/freezer so I’m prepared. No excuses.

Onto today’s Crossfit WOD:
Romanian deadlifts – 6-8 reps
Perfect form push ups

3 rounds:
Weighted hip extensions – 8-10 reps
Side plank 45-60 secs each side

3 rounds:
Dumbbell push press – 8 reps
12secs AirDyne all out

Our coaches have started to get us to really focus on our form. And now even before trying ring dips a requirement is to be able to do 20 strict push ups. I was able to do 12 in a row.  I like the idea of having small goals to work on.

My favorite cookie


This has got to be my new favorite cookie. Best part is that it’s so simple to make. I started with the basic banana and oatmeal cookie, and added a few more things. Here’s what I used: 2 small super ripe bananas mashed Approx 1 cup of oats A splash of vanilla Tossed in some unsweetened shredded coconut Also add in some dark chocolate chips Mixed it all together Formed flat cookies on a lined baking sheet Cooked at 350 for 25 minutes So delicious!

Sick… 5 days til Mexico

Such bad timing, but I guess it’s better to be sick before and not during the trip.
Had a busy Sunday night cooking and I tried really hard to enjoy the cooking rather than try to rush through it all.
Cajun shrimp, brown rice and whole wheat cottage cheese and blueberry pancakes.


I tried to go to work today. But coworkers saw that I was sick and sent me home. Internet connection at home was flakey so I actually didn’t get much work done. I did have a much needed afternoon nap though.
No workout for me today. Just taking it easy and thinking about what I need to pack.
You know what’s funny? I thought about snacking on some Cheetos or potato chips, cause I am sick and it’s allowed right? 😉 not really but I was prepared to use my cold as an excuse in car I ate an entire bag. But oddly enough, I just don’t want any potato chips. That is so unheard of!
I will be snacking on grapefruit though and drinking lots of water.

Post X-Mas… Only 17 more days til Mexico

Wow… The holidays have come and gone and we are now 5 days away from ringing in a new year. The past few days have been filled with family gatherings, lots of laughter and definitely lots of food. My favorite dishes that I completely indulged in? Noodles and spring rolls. Regardless of where I was, I couldn’t turn down the noodles or springrolls. I swear I think I’ve eaten 6-8 a day for the past 4 days! But they’re so delicious! Veggies rolled up and fried in a crispy and light wrapper. We’re having friends over on Friday and I guarantee there will nd more springrolls. Can’t wait!
The kids have been showered with gifts and we are so thankful for everyone’s generosity and thoughtfulness.


This is the time of year to start thinking about goals for 2013. I have a couple big ones in mind but won’t post them until I’m 100% certain that these goals are for ME.

More holiday indulgence

The last couple days haven’t been the greatest. You would think after setting my 1 year progress shot it would make me more motivated. And it definitely did, but with the work year winding down the celebrations and good food are plentiful.
Yesterday we took our project manager out for lunch, who decided to retire and move to Mexico and wouldn’t be back in the new year. We went to a nearby restaurant and I had the chicken fingers and sweet potato fries basket. And really, it wasn’t good. And yet I ate almost all of it. Ugh! Worse feeling ever!
Anyway, still getting some good workouts in and picked up some chocolate to last me through the holidays.


Cajun shrimp with peppers and spinach


This is definitely one of my favorite go to recipes.  I’m sure I’ve posted it before but I can’t get over the simplicity of the dish.
It literally takes less than 10 minutes from start to finish.
Shrimp (peeled), peppers (I used yellow and orange), garlic, spinach (added last) and olive oil. All tossed and sauteed in cajun seasoning.

2 day pass…

As soon as I woke up today, my mind was racing through the tasks I needed to get through to prepare for the Childrens Christmas party tomorrow. I had to swing by the office (on my day off) to tie up some loose ends then came back home to load up the cargo van before I headed out to the party venue (oh had to pick up a helium tank and bubble machine first)
Got to the venue just before 11am and then finally left at 430pm.
Just a few more items to pick up and we’ll be ready for the party.



Gifts are all set out and organized.


Santa’s area is almost done, I just need to wrap up a few more presents.

Good news is that things with the party are going well, bad news my meals have suffered. I even had a donut when we had our late lunch and a banana fritter for supper.
Tomorrow I suspect that I will be running around all day and will be enjoying the popcorn, mini donuts and other goodies at the party.
For that reason I’m giving myself a 2 day pass (including today) to relax a little with my meals.
