The other day I picked up a bunch of ripe bananas. I wasn’t sure what I was going to use them for and decided tonight (after alot of online searching) to make banana oatmeal cookies. These cookies are quite healthy and I would probably cut back on the Splenda.
1 cup mashed banana
2 cups oats
1/2 cup ground flaxseed
1/4 cup Splenda
1/2 tsp cinnamon
1/4 cup coconut oil
1/4 cup dark chocolate chips
Mix all ingredients in a large bowl.
Form into balls and flatten on a baking sheet.
Bake at 320° for 30 minutes.
Next time I’ll add shredded coconut as well. This will be great to bring to work and satisfy the craving that usually hits me after lunch.
